Valentín's culinary path took him through some of the most demanding kitchens in Spain. He trained and worked alongside Ferran Adrià, Martín Berasategui and Carlos Piernas — an education in precision, creativity and rigour.
He saw, repeatedly, the same gap in professional kitchens around him: extraordinary recipes lost to staff turnover, inconsistent execution, waste and labour cost. Nova Gamma was created to close that gap — to industrialise excellence without industrialising taste.
